Chipotle Chili
Cauliflower Steak

Ingredients
  • 1 head of cauliflower

  • 1/4 cup olive oil

  • 2 limes juiced & zested

  • 2 garlic cloves grated

  • 1 tsp fresh ginger zested

  • 1/2 tbsp chipotle powder

  • 1/2 tbsp paprika

  • 1/2 tbsp smoked paprika

  • 1 tbsp coconut sugar

  • 1 tsp Himalayan pink salt

Instructions
  1. Cut cauliflower into 1" steaks.

  2. Combine olive oil, lime juice & zest, ginger and garlic together in a bowl.

  3. Mix spices, coconut sugar and salt together in a separate bowl.

  4. Brush the cauliflower with the olive oil mixture and generously sprinkle with the spice mixture.

  5. Sauté the cauliflower steaks for approximately 5-6 mins each on medium/high heat, preferably with a covered pan.

  6. Garnish with fresh cilantro.

The spicy flavors pair well with a cool Vegan Ranch Dip.
