Raw Carrot Sunflower Seed Spread

This raw vegan carrot sunflower seed spread is healthy and versatile and only takes a few minutes to make. It requires some overnight soaking and then only a few minutes with a food processor.
I like to use as a dip for fresh veggies, but also like to add it to salads. It's great added to wraps with fresh sprouts, sliced veggies, and avocado. Nori rolls are also an easy and delicious way to enjoy this spead.

Ingredients
•2 medium carrots, peeled and roughly chopped (about 1 1/2 cups)
•1/2 cup raw sunflower seeds (soaked overnight)
•2 tbs tahini
•2 tbs lemon juice
•1 tbs tamari
•1 galic clove, minced
•1 tsp tumeric
•1 tsp cumin
•1/4 tsp sea salt
Instructions
1. Drain and rinse your overnight soaked sunflower seeds and transfer to a food processor along with all other ingredients.
2. Pulse on low until all ingredients are mixed and reach a crumbly consistency, not mushy.
3. Enjoy as a spread, topping or on it's own. Keep refrigerated in a sealed container for 5-7 days.
NOTE: Soaking the sunflower seeds is not essential but will help with digestion.
