Carrot cake bites

About the Recipe




These healthy treats taste like a slice of carrot cake. Enjoy them as guilt free snack.

Ingredients

  • 1 cup carrots,

    peeled and cut in chunks

  • 1 1/2 cup dates (soaked if needed)*

  • 1 cup pecans (or walnuts)

  • 1 cup oats

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • Pinch salt

  • 1/2 cup shredded unsweetened coconut (to coat)

Preparation


  1. Add the carrots to food processor and pulse until crumbly. Add pecans, dates, oats, cinnamon, nutmeg and salt and blend until combined and a dough is formed. Stop and scrap down the sides as needed.

  2. Add the shredded coconut to a small bowl.

  3. Once blended, roll into golf sized balls, and roll in coconut. Place on a small sheet tray or plate and place in fridge or freezer.

  4. Store in the fridge up to 10 days or in the freezer for up to 3 months.
