About the Recipe
These healthy treats taste like a slice of carrot cake. Enjoy them as guilt free snack.
1 cup carrots,
peeled and cut in chunks
1 1/2 cup dates (soaked if needed)*
1 cup pecans (or walnuts)
1 cup oats
1 tsp cinnamon
1/4 tsp nutmeg
1/2 cup shredded unsweetened coconut (to coat)
Add the carrots to food processor and pulse until crumbly. Add pecans, dates, oats, cinnamon, nutmeg and salt and blend until combined and a dough is formed. Stop and scrap down the sides as needed.
Add the shredded coconut to a small bowl.
Once blended, roll into golf sized balls, and roll in coconut. Place on a small sheet tray or plate and place in fridge or freezer.
Store in the fridge up to 10 days or in the freezer for up to 3 months.
