About the Recipe
This vibrant nourish bowl is a delicious blend of fresh veggies, and zesty flavors, perfect for a wholesome plant-based meal.
Ingredients
*For the roasted veggies:
1-2 sweet potatoes (peeled & diced)
1-2 medium beets (diced)
2 Tbsp olive oil
1/2 tsp salt
1/4 tsp pepper

*For the crispy chickpeas:
1 (15 oz) can chickpeas, drained and rinsed
2 Tbsp olive oil
1 tsp garlic powder
1/2 tsp salt

*For the nourish bowl:
2-3 cups favorite greens (I used arugula)
1/4 cup pumpkin seeds
1/2 cup tofu feta, crumbled*
1 cup tzatziki sauce* or your favorite hummus*

Preparation
*For the roasted veggies:
Preheat the oven to 375F
Add the sweet potato and beets to a baking sheet and drizzle with olive oil and season with salt and pepper.
Roast for 25-30 minutes, until soft and golden.

*For the crispy chickpeas:
Preheat oven to 375F.-Pat the chickpeas dry with a clean dishtowel or paper towel. The drier the chickpeas are, the crispier your end result.Â
Next toss the chickpeas with olive oil, garlic powder and salt until coated, then arrange in an even layer on a baking sheet. Â
Bake for 25-30 minutes, shaking the pan half way through for even crispiness.
*For the tzatziki or hummus:
While the veggies and chickpeas are roasting, start preparing your tzatziki sauce* or hummus*

*To assemble the nourish bowl:
Start by spreading a layer of tzatziki sauce* or hummus* to the bottom of a bowl or plate.
Next top with layers of greens, roasted veggies and crispy chickpeas.
Top with crumbled tofu feta*, pumpkin seeds and fresh dill.
