Delicious peaches and cream overnight oats...enjoy as a fiber packed breakfast or guilt-free snack to fuel your day.

Ingredients
1/3 cup rolled oats
1 Tbsp chia seeds
1 Tbsp maple syrup
1/3 cup plant based milk (I used soy)
1/3 cup fresh peaches (chopped)
TOPPINGS
2 Tbsp coconut yogurt
Peaches, chopped
Candied pecans or nuts of choice
Preparation
Add all ingredients to a 250ml Mason jar, and stir to combine.
Refrigerate overnight (or at least 2 hours).
When you’re ready to enjoy, add your toppings.
NOTES
Prepare a few batches ahead for a convenient meal prep option for those busy mornings or on-the-go snacking.
